Hi,

My domain MX points to an A reocrd and A record point to my mail server.

Within this setup what are my options to configure a backup MX record to act
as a "queue and retry delivery" mechanism if my mail server is unavailable ?

where would you be pointing email to go to, if your mail server was down?
have you asked your ISP if they will hold/queue that mail for the needed
duration?

If your ISP or another company has agreed to do store & forward for you, add
them as the secondary/lower priority MX record.

Note that this can lead to an increase in spam and may not be needed anyway.
Your senders' mail servers will retry delivery for 3-5 days anyway.
