Here is the situation. Backups have not run in 2 months. I have all
of the exchange logs for that time period (Oct 17th to dec 6th). The
exchange server is still up and running, no issues there. There has
been some shady happenings going on and the CEO has asked me to recover
all messages sent to/from a specific account. This individual is the
reason the backups have not been running. He has also been deleting
messages from his account as he goes.

Is there anyway for me to recover the deleted messages using the log
files? Obviously they have already been played, but the information
contained therein would be of great benefit. Correct me if I am wrong,
but the default retention for mail is 30 days after deletion.

I should also mention that I have the last backup performed, that of

there is a setting "Do not permanently delete item until the store has been
backed up". Is that checked?
If so then you might just be able to log in as the user and check the
dumpster.
If the user manually cleared out the dumpster then you might be out of luck
