Update Name Fields Exchange 2007

When we setup Exchange 2007 mailboxes a lot of people did not have
last names on their mailbox accounts; now they want them. I have
updated all of the fields in the Exchange Management Console; I did a
Global Update on the GAL, made sure the AD was updated also but their
FROM email address in Outlook has not changed. Any ideas how to get
Outlook to pickup the last name ?

Can you download a copy of the offline address book on an Outlook client to
see if that resolves the issue?

Also, are the names appearing correctly in OWA? If they are it's probably a
client side issue, if not then it's a server side issue.

What does their entry say in the GAL?
Are you sure you changed the Display Name?
