Exchange 2007 was installed into existing Exchange 2000 organization and the
new server was set to DHCP. Assigning a static address won't stick. Any
thoughts?

This won't be an Exchange server issue......I suggest you post in a Windows
server group for the most expert help. Also, make sure you're using the
latest supported NIC drivers from the hardware manufacturer.
