Is there a log of emails that are sent to users out of the organization. I
need to track down some emails that were potentialy sent by one of my users
for legal reasons.

Enabling Journaling ahead of time would be your option.

SMTP disclaimer not displayed in outbound emails I setup the disclaimer using VBScript method and registered the event sink with the Exchange 2000 SDK. I use the smtp connector forward all e-mail going outbound to be scanned. On the firewall side i also setup rules to forward it to my 3rd party app.
