We currently use another product to host about 16 different domains /
organizations for email services.

My question is can Exchange 2003 (that's the version we have but never
installed) host 16+ different domains / organizations for email services.

Is this difficult to implement?

Not at all. A ton of people do it and I bet you'll get another post
from a chap named Oliver who does it for a living.
Whether I would move to Exchange is a different issue. If you are
currently allowing the clients in on POP/IMAP or a webmail interface
and want to offer customers some serious whizzbang features then take
a serious look at it.

Hi,

It isn't difficult to implement. If you aren't looking for a fancy
automation system follow these guides:

If you are looking for any easy to use system you may want to think about
deploying HMC, take a read here:

Note: Version 3.5 is for Exchange 2003.
