Is there an easy way to rename an Exchange 2K Front\End server? It is
not a domain controller.

No there isn't. If you rename an E2k server, the services won't start
afterwards. In particular, the System Attendant won't start, and so on a
front-end server, you'd never be able to make any config changes to it.
