How to remove Users from Global Address List

Can somebody tell me how to remove Users from Global Address List, without
removing the user from the Active Directory.

Tick their "Hide from Address Book" on the Exchange Advanced tab.
If you don't have an Exchange Advanced tab then select View | advanced
features on the MMC menu,
