How Exchange controls incoming mail traffic?

I mean to ask for outgoing mails exchange user SMTP protocol, and also I
know that it uses pop3 for incoming mails, but out going mails SMTP Virtual
server to control outgoing mail traffic, like wise is anything there for
incoming mails.

an also we can check SMTP queues for outgoing mails traffic, is there any
thing like this for incoming mails?
