Okay, first of all, this has not happened to me. I am just wondering if it
would be possible.

Say, if an exchange server crashes and there are no accessable backups. You
rebuild exchange 2003 and now you want to get all the mail back. That mail
is stored in the .ost files on Outlook under the old Exchange server
mailbox.

Best guess:
Open client, export everything to a .pst file and then import the .pst file
up to exchange?

Any better way?

Possible but I would not count on OST to PST file import as your backup
solution to recover mail, even in emergency cases.
