Hi there,
is there a way to log ActiveSync synchronizations on the Exchange
server?
I am aware of IIS log but was wondering if there was a way to do a
more detailed logging like
exactly which contacts were synced etc...
For example for troubleshooting purposes.

You would most likely need to write a script.

You might want to try these scripts from the Exchange Team Blog
Generate some advanced ActiveSync Server usage stats using IIS Logs

I use the Microsoft Exchange ActiveSync Mobile Administration Web Tool
to determine the last sync time
