1 org, 2 sites, with a hub transport server in each site.

Is it possible to subcribe each hub transport server to an edge in its own
site?

Each site would have, and Edge, Hub Transport, CA, and Mailbox Server. MX
records configured to provide redundancy if one link is down.

Is this doable? Any "gotcha"s?

Yes, that's doable and not an uncommon scenario. Each AD Site can have its
own EdgeSync subscription. EdgeSync subscriptions are AD Site-based - you're
subscribing an Edge to an AD Site, not to a particular Hub in the Site.
