I have Exchange 2003(SP2) running on Windows 2003(SP1) two node
active/passive cluster? Is it possible to restore Exchange to a single
server with the same name as the Exchange virtual server or a completely
different server name all together? Are there any documented procedures on
this process?

Your best bet is to use a standby cluster for such actions. You can use a
single node cluster if you only have one EVS to recover.
